Coconut Pancakes

Pancakes are my favourite breakfast ever (followed closely by eggs benedict FYI), so when Pancake Day rolls around I'm like a kid again! Pancakes for breakfast lunch and dinner please. ALL DAY. 

However, this year I really really have been try to eat better so I thought instead of posting about my calorific carb-fest fluffy American pancakes (drooool) I would venture a super healthy alternative recipe, which uses no white flour, no sugar and no butter - basically the closest thing to pancakes that are good for you. Ok so not quite but they aren't super unhealthy, which is awesome and they taste good too. I used the ingredients guide on the coconut flour box as I read somewhere that coconut flour is difficult to bind. It worked pretty well and then I just added in some cinnamon because why not? For the recipe itself you simply mix the dry ingredients and the wet ingredients in separate bowls and then combine. Make sure you melt the coconut oil if it is solid and allow to cool slightly so you don't cook the eggs when your mixing. 

I used blueberries and a teeny bit of icing sugar to decorate.

Biona Organic Coconut Flour ingredients 

2 eggs
2 tbs coconut oil
5 tbs milk (I used semi-skimmed)
1 tbs agave nectar
1/4 tsp salt
2 tbs coconut flour 
1/4 tsp baking powder 

+ 1 tsp ground cinnamon, then blueberries and icing sugar to decorate.
